Grilled Alaskan Salmon with Brown Sugar Glaze & Grilled Pound Cake with Caramelized Strawberries

The days are getting longer and that means it’s time fire up the grill! We are sharing one of our favorite ways to serve up our Alaskan Salmon paired with a dessert that has the look and taste of both fine dining and comfort cooking right in your backyard! Trust us….impressing your guests has never been so easy.

Grilled Alaskan Salmon with Brown Sugar Glaze and Alaska Pure Alder Smoked Sea Salt

INGREDIENTS

2, 6-8 oz Wild caught Salmon Fillets*, skin and bones removed - you can use a whole fillet also, just adjust quantities!
3 TBS Brown Sugar
2 TBS Melted Butter
1 TBS Fresh chopped Garlic
2 tsp Soy Sauce
1 TBS Honey - we love STOKED BEEKEEPING Fireweed Honey
3/4 tsp ALASKA PURE ALDER SMOKED SEA SALT - more if you’re salty like us!
1/4 tsp Fresh Ground Pepper
Fresh chopped Chives for garnish 

DIRECTIONS

  • Prep outdoor grill - you will want medium heat

  • In a small bowl whisk together Brown Sugar, Melted Butter, Garlic, 1/2 tsp ALASKA PURE ALDER SMOKE SEA SALT (reserving the rest for finishing after grilling), pepper and Soy to make glaze

  • Place Salmon in heavy foil, rub Brown Sugar Glaze into salmon, then drizzle with honey

  • Fold or roll up all sides of foil around salmon to make a boat 

  • Grill Salmon until glaze bubbles and Salmon is just opaque and starts to flake, 6 - 10 minutes depending on grill.  

  • Remove from grill and sprinkle with the remaining salt and chopped chives, plate with lemons for garnish or squeeze on at table, let salmon rest 5 minutes before serving

Grilled Pound Cake with Caramelized Strawberries and Alaska Pure Vanilla Bean Sea Salt

This is a super easy and crowd pleasing dessert.  The grilled strawberries and lemon zest are key.  Serve it with vanilla ice cream or fresh whipped cream for a show stopper at a BBQ!

INGREDIENTS

1 Pound Cake, sliced into 1 inch slices - use your favorite recipe, but we often use a store bought frozen cake, shh … don’t tell
1/4 Cup Butter
1 TBS Olive Oil
1 Pint Strawberries, clean and tops removed
1/4 Cup Sugar
Zest of 1 Lemon
Fresh Mint for garnish
Good Aged Balsamic Vinegar

DIRECTIONS

  • Melt Butter then add Olive Oil to Butter

  • Using a pastry brush spread Butter mixture on both sides of sliced Pound Cake, set aside - you can do this ahead of time and put in the fridge or even refreeze for later

    At grilling time:

  • Prep your grill for medium low heat - it should be clean and oiled 

  • Combine Sugar and Lemon Zest in a small bowl

  • Dredge Strawberries in Lemon Sugar - get them good and coated

  • Place Strawberries on grill first, then follow with cake, so they are on at the same time

  • Flip cake when grill marks appear, turn berries as they start to puff and caramelize - the pound cake will grill quicker than the berries

  • Pull cake off grill and plate individually, then pull Strawberries, slice in half

  • Add a scoop of Ice Cream, drizzle with Balsamic Vinegar, garnish with mint

  • Sprinkle with ALASKA PURE VANILLA BEAN SEA SALT - we’ve used our WILD BLUEBERRY and our COFFEE BEAN SALT as well!
